Update "AndroidX.Window" to "1.0.0" stable release

Current binding uses beta04 (released 11/17, bound in #428): https://developer.android.com/jetpack/androidx/releases/window#1.0.0

1.0.0 stable was released 1/26/22.

Packages affected:

• Xamarin.AndroidX.Window
• Xamarin.AndroidX.Window.WindowJava

IMPORTANT: see PR #436 (and PR #449) attempts to bind the rc01 version of the library. Required a bump from Kotlin 1.5 to 1.6 which seems to have introduced other issues. See comment.

We can at least test the stable package functionality from the CI-produced package, while waiting for the Kotlin 1.6 issues to be resolved.

That's why I asked. It is kinda ugly. I need to think of some other way of bumping versions.

Maybe we should use 1.0.0.8 as the stable version number - the IDE is recommending the beta over the 1.0 release (even though only when Include prerelease is checked)

@moljac so... this build doesn't drop-in over the one from my branch. The samples fail to build with this error:

All I can think of - merge commit reverted Java.Interop version fix. Let me check.

NuGet will offer the package with the "highest" version number.

1.0.0.6-beta04 is higher than 1.0.0 when Include Prerelease is checked.

We will need to publish a stable 1.0.0.6 or higher in order for it to be the default.

It looks like the published 1.0.0 version does indeed reference Java.Interop 0.1.2.0:

I wonder if this is because it was built for Mac. Since there are no releases of VSMac 17.X yet, it's not using the same version as Windows. Maybe we can disable our Mac CI until the situation improves?
