Just cleaning up the "Project Jackson" indicator. Changed it to "Project"

I think it's probably best that if we remove this here, we remove it from some other places at the same time. @SharePointing can you comment on the goal here? I think there's a chance you're just trying to align the header to the directory purpose? if that's the case we can make it infrastructure and take this without changing the other "project jackson" references

I guess we have to decide - is it Project Jackson or "Containers Rest Cosmos Java"
I was just simplifying to "Project in the generic sense"
Happy to leave it be if we want it to be consistent, I'm just starting to point people here as reference sometimes

@code4clouds can you comment on the overall project goal? If we want to rebrand we should book the overall work to do so, rather than asking @SharePointing to do it here. 😃

yes, as far as rebranding we also have a discussion going on on this issue about changing/shortening the repo title name, maybe if we come to a conclusion on that we could do this in the same go?
