[Test]: Scaffold unit tests in composables and api-client package #367

How the project can be improved?
Since we added support for unit testing in theme module #279
we should do the same with composables and api-client modules.
What are the acceptance criteria?
- developer can run unit tests in composables package
- developer can run unit tests in api-client package
- test.yml workflow include all tests
