integ tests - fix flaky structured output test

Description

The tests_integ/models/test_conformance.py::test_structured_output_is_forced[gemini] integ test periodically fails because Gemini sometimes returns the following output:

Weather(time='', weather='')

This however is valid given the schema:

class Weather(BaseModel):
    time: str
    weather: str

I updated the test to instead assert that no exception is raised. If no exception is raised, the model output is generated successfully.
