After #309, the I/O documentation [here](https://github.com/stac-utils/pystac/blob/8946c9b192e20f53b75196915bb078c91954ae76/docs/concepts.rst#using-stac_io) is no longer accurate. We should update those docs to reflect the new pattern for customizing I/O using `StacIO`.
