Upgrade integration builds to Hibernate 6.3

Current state of affairs:

* Hibernate 6.3.0.Final is available, but contains a bug that prevents core Spring Framework's `EMF` bootstrap from working.
* Builds (SD JPA, but also downstream example projects like RESTBucks) seem to work fine on 6.3.1 snapshots both on the JVM and as GraalVM native images
