SDK version upgrade from 7.x to 8.x

As of March 10th, 2025, the latest version of the Android SDK is 8.3.0; the current version in use is 7.18.0 (via id "io.sentry.android.gradle" version "4.14.1"; the latest sentry-android-gradle-plugin 5.3.0 uses Android SDK v8.3.0)
