This PR tentatively updates the metadata parsing document for EPUB following the updates to RWPM (layout, presentation, etc.)
It acknowledges the deprecations through an Appendix that is mapped to the one that exists in RWPM but I am not sure whether we want to provide the original mapping tables just in case, or remove them entirely? – it could be confusing to have them present.
