Readthedocs build failing

What is your issue?

It seems that the readthedocs build is failing since some upstream update.
pydata-sphinx-theme seems to be incompatible with the sphinx-book-theme.

Maybe we have to pin to a specific or a maximum version for now.

there's a bugfix release of sphinx-book-theme that has been released about two hours ago, we're just waiting on that to propagate to conda-forge.

the new version is on conda-forge, rerunning the failed CI should work now.
