Always use conda-forge when installing packages using conda

Found that tensorboard and ipykernel could not be installed using the default channels and conda-forge had the latest versions.

E.g. default channels for ipykernel (macm1) is using 5.3.4 (very old & outdated version).
conda-forge is regularly updated
