Consider changing store-gateway replicas and replication-factor #262
Description
Currently this repo defaults to 3 store-gateway pods and replication-factor 3, so all the pods read all the blocks.
I question whether this is a good default.
RF 2 and 4 pods would better illustrate the sharding system.
