Hi,
first of all, thanks for your effort to make it easier to use letsencrypt.
I thought it could be better only to use docker images that are known to be stable and therefore use the tags that represents that stability.
As seen in Pullrequest these would be in my opinion:
nginx:stable-alpine
jrcs/letsencrypt-nginx-proxy-companion:stable
