While working on the ES 9.0 version bump in #112570 we are seeing these tests fail presumably because we are trying to restore a 7.x snapshot. I've confirmed that putting the minimum supported index version back to 7.0.0 allows the tests to pass so it's unrelated to anything else in that PR. We'll likely need a new snapshot to be able to run these tests against 9.0.
