Maintenance: Update docs engine to latest

Summary

Mkdocs Material, the engine we use for the documentation, has recently released a new major version. The new version comes with several improvements, one of which is better search support.

We should update the version.

Why is this needed?

To provide a better viewing experience to our docs readers.
