Puts the M2 system map at the first level of the theme config with key
_mat-system, instead of being nested into thecolormap. It will soon also contain more information than just colorAlso fixes where theme files were using the inspection utils to get system colors, instead just use map functions.
Also, refactors the light/dark define functions to reduce duplication
