Enhance backward compatibility workflow

Why

We need to implement some enhancements to the Nightly backward compatibility workflow to provide more versatile capabilities of testing.

What

Implement the possibility to run the test on a specific release (unstable by default).

How

• Update the Run workflow form with a new release to test field
• Update the matrix computation to support a custom release to test
